There are three separate language settings in TapTime, and confusing them is the usual cause of “why is this in the wrong language”.
The three of them

Your own language
Change it in your profile and only your screens change. It is per person, not per business, so a Bulgarian manager and a Turkish chef can each work in their own.
What language a guest gets
Public pages open in the language the guest's phone asks for, when you publish it, and fall back to your main one otherwise. There is always a switcher, and it lists language names rather than flags — a flag is a country and not a language.
Emails
A guest's confirmation and reminder are written in the language they booked in. If they used your page in Turkish, that is what arrives.
Time zones
Each location has one, and it is the one every time is displayed in. Underneath, times are stored in universal time, which is what makes the clocks changing a non-event and lets a business with locations in two countries have a coherent report.

Can I force my public page into one language?
Publish only that language and it is the only one offered.
Does a guest need to choose a language every time?
No. Their phone tells the page, and their choice is remembered if they change it.
