Because a card has to know who is holding it. A paper card knows nothing; a web page forgets. An account with a phone number remembers, which is what lets a guest change phones, keep their stamps, and see their reward the moment it is issued.

What you can see about them
Their name and their activity with you: stamps, rewards, visits. Not their phone's contacts, not their location, and nothing about the other businesses whose cards they hold.

Does the guest need to install anything?
No. Menus, table bookings and appointments are all plain web pages that need nothing installed.
What if a guest changes phone?
They sign in with the same number and their cards are there. That is the advantage over a paper card in a wallet.
Can guests delete their account?
Yes, from Profile → Delete account on the guest page. Their account, cards and devices are removed.
